- 16 Extra Large Shrimps
- 8 Slices Lean Bacon cut in 1/2
- 1/2 Cup apricot Jam
- 2 tea spoons vinegar
- 4 teaspoons unsalted butter
Add apricot jam and vinegar together in a saucepan. Bring to a simmer. Stir in butter cubes until well blended and remove from heat before boiling. Season Shrimps with salt and pepper. Wrap a piece of bacon around each shrimp and secure with tooth pick. Add sauce over bacon wrapped shrimps and keep in refrigerator until the JAG coals are ready for use. Scrape just enough coals for medium heat and rotate on a regular basis while dripping it with the sauce.
