Baked Egg Potato Bowls For Breakfast

MOTHER OF GAWD … Being Irish I have a wee potato fetish, I love them, I think I actually love them more than cheese and one of my worst fears is that we will encounter another potato famine. So I am just minding my own business this morning and to my delight I found these on  StumbledUpon. I nearly fell off my chair!! can you imagine.. potatoes and eggs AND cheese for breakfast?

Its a match made in heaven  and the breakfast of champions if you ask me!

To create these lovely things of beauty you have to first bake the potatoes. When they are cooled down, cut off the top part and scoop out the flesh to create the bowls. Then grab some melted butter and brush inside the bowls followed by adding some grated cheese. Top with your favorite cured meat, I use bacon, and then crack an egg on top in each bowl. Give a light dusting of salt and pepper, some more grated cheese and a few thin slices of green onions. Pop them in the oven on 180 degrees until the eggs are cooked and the cheese is melted.

These would be perfect for spoiling me .. I mean your Mother on the weekends! Enjoy and let us know what you think.
